his is a question that many ask and that is usually summarized by most in a single phrase...."It's simply delicious!".
The specific reasons however may not be as obvious to the average sushi fanatic. Sushi it a food of perfection as Japanese philosophy is that of "less is more" and "quality not quantity".
It all begins somewhere at around 3:00am at the Fulton Fish Market where our headbuyer goes to hand select only the highest quality Tuna, Salmon, Jumbo Fluke, Shrimp, Mackerel, Yellowtail, Eel, Clams, Sea Urchin and other such fish ingredients for our clients. These fish are brought back to our kitchen where they are cleaned and prepared in individually different ways so as to each be perfect to the pallete. It is only by that point that we are half way complete with our aim for perfection. Next we receive our choice delivery of Japanese Sushi vegetables from around the world depending upon season. Last but most certainly not least, our master chefs prepare the secret foundation of good Japanese cuisine, Sushi Rice. Slightly sweet, heavenly soft with a mild tang it is the rice that our mouth watering fish selections will be married with.
Finally, without little realization of the daily routine, we are happily greeted by our many clients as we arrive with our delicacies and setup our sushi bars right in the middle of your cocktail party. Within a brief 30 minutes, it's as if our restaurant had landed smack in the middle of your gathering. Our chefs creating mouth size delicasies that burst with contrast and flavour of freshness. Hot/Cold, Creamy/Spicy, Soft/Crunchy, It's all there for the taking. Enjoy our Labour of Love.
